Terrine Dreams

Food can be used to affect travel, but food also has a big affect on traveling. Perhaps you’ve had the experience — the best glass of white wine you ever had at a picnic in Cinque Terre, that amazing ceviche on the beach in Mexico, the ta’amiya sandwich you spent three hours hunting down through the tangled streets of Cairo. Food can make some of the most memorable experiences of a trip — how many “best-you-ever-tasteds” have occurred away from home?

But was that white wine really very good? Or were you lulled by the sun, the beautiful countryside, the freedom from work and daily responsibilities, your lover by your side? Anybody who has rapturously sprung for a case of such wine to ship home might be quite disappointed to see how that country white holds up against everyday life. Some things are just for the moment. That may be, I’m afraid, the case for terrine for me.

My first terrine ever — unless you count meatloaf — was in Paris. Martha and I were only there for a couple of days and I was determined that at least one of our otherwise frugally-provided meals would be at a fancy-ish, bistro-ish place. With the help of a Lonely Planet guide we found a maison suitable for tourists such as ourselves. And there on the carte, among the first courses, was a terrine of foies blondes. My French was (and still is) severely limited — in fact I believe we communicated with our waitress in Spanish — but I knew enough to realize foie is a good thing.

I was surprised by what came to the table: a rectangle of grayish-tan meats, bound into a mosaic with jelly. It was cool to the touch. Also brought to the table was a large earthenware crock full of zesty cornichons served with rustic wooden tongs and a venerable old well of mustard — the charming details that makes you feel good about spending 40 euro on a meal. Biting into this mystery-meat melange I was again surprised, but pleasantly: the flavor was clean, meaty, and smooth, with the mustard and pickles adding a zesty punch. I greedily finished my plate, hoping Martha wouldn’t be interested in sharing.

Since then, I’ve been in love with the idea of terrine and  have tried to recreate that magical meatloaf in my kitchen — largely without success. My quest kicked off when I obtained a suitable reference, Time-Life’s Terrines, Pâtés & Galantines. This book has been the source of inspiration for a number of attempted terrines, but most of them have been disappointing, especially when compared against that Parisian ideal. There are a lot of challenges: getting the texture right is difficult: you want to mix chunks of meat, coarsely ground meat, and smooth purees into a homogenous loaf that slices clean. And then there’s the flavor. It wouldn’t be much of a terrine without liver, but thus far I seem to have a knack for overdoing the liver: my terrines come out with mineral flavors and are overly rich. Nor does the appearance help: the culinary aesthetics of the early-eighties cookbook that I am using as a source differ markedly from what we would consider attractive today, but I’d be happy if I could even pull them off. Instead, I often end up with grey loaves wrapped in wan strands of undercooked bacon, exuding a strange gray crud; the kind of thing I have to convince Martha to eat.

If that all sounds discouraging, I have also learned a lot from these many failures. Working the meat mixture thoroughly seems to improve the cohesion of the loaf, as does omitting things like whole nuts whose sharp edges tend to break it up. The taste for adding liquor so present in Terrines, Pâtés and Galantines is something best moderated if not omitted all together. Wrapping meat mixtures in fatback or covering them in rendered lard is kind of gross; bacon is acceptable, but it helps if it gets a little crisp. Go easy on the liver. Always fry a portion of the mixture to taste for seasoning before committing the loaf to the oven. A terrine is a lot of meat for two people to eat in reasonable amount of time.

So terrines continue as a work in progress, each one teaching me something about the next, until, I suppose, I am making that Parisian terrine of a few years ago.

Venison Terrine

This is my most recent terrine, which I made in the midst of a snowstorm that had us stranded inside, using only ingredients we had on hand.

Meats:

  • 1 ¾# ground venison (a mix of ground and whole venison, cut into cubes or strips, would be preferable, but we only had ground)
  • 4 oz fatback
  • 14 ¾ oz lamb liver (this is way too much liver, but I was trying to use it up. Lesson learned.)

Aromatics:

  • 1 onion (93 g)
  • 2 cloves of garlic (8.6 g)

Seasonings:

  • 20 g salt
  • 2 g pepper
  • .7 g juniper berries (about seven)
  • 1 bay leaf

Adjuncts, Binders, &c.

  • 2 eggs, lightly beaten
  • 20 g bread crumbs
  • 125 g milk (1½ Tbsp)
  • 9 g whiskey (2 tsp)

Sautee the livers in a few tablespoons of butter until they darken. Place in bowl of a food processor. Sautee onions and garlic, adding more butter if necessary. Add to processor with liver. Process liver and aromatics with milk until smooth. Work the pureed mixture through a sieve into a large bowl.

Cut fatback into 1″ chunks and freezer 30 minutes. Chop in food processor until coarsely ground. Add to bowl with liver puree.

Grind the seasonings, except the salt, in a spice grinder until no large chunks of bay leaf remain. Add spices and salt to bowl with liver puree.

Add venison, eggs, bread crumbs and whiskey to bowl. Work vigorously until thoroughly combined (you could also beat it in a stand mixer). Fry a small portion of the mixture in a skillet to taste for and adjust seasoning.

Butter a terrine or loaf pan and line with buttered parchment. Add meat mixture to the terrine, smoothing the surface. Cover with foil. Bake at 300ºF until loaf reaches an internal temperature of 140ºF. Remove from oven and cool, draining juices from pan.

Wrap the terrine — still in the mold — in plastic wrap and place in the refrigerator. Place something flat over the top and weight it. The terrine is ready to eat the next day, though some argue for aging it a few days before slicing and eating.

Serve with mustard, pickles, and crusty bread or crackers.

Faisan au Vin

“They just don’t make cocks like they used to.” So laments just about every modern recipe for coq au vin, the venerable French braise of rooster in wine. The story goes that the dish was developed as a way to use the meat of tough old roosters past their prime; only a long braise could break down the serious connective tissue developed from a lifetime of crowing at the dawn, strutting around the yard, getting in fights — in short, acting like a cock.

Nowadays, the poultry we eat goes from eggshell to belly in as little as six weeks; not enough time to develop muscles flavorful enough to stand up to hearty red wine sauce. Recipes attempt to compensate for modern chicken’s relative blandness with modifications: reducing the braising time, using select parts of the bird. But what if instead of changing the recipe to suit the bird, you found a better bird?

The original concept of coq au vin demands a bird that has lived a hard life, working strength and flavor into its muscles as it struggles every day for mere existence. You could ask your butcher or farmer to track down the oldest, meanest bird in the hen yard and deliver it to your table, but such animals are in short supply and someone might get hurt. Or, you could turn to wild birds — game — that live less sheltered lives than today’s chicken. What about, for example, pheasant, which I happen to have in great supply thanks to the generosity of our friends Johnny & Stacie?

The pheasant in question came into my possession deeply frozen. As I was waiting for it to thaw, I created my braising liquid: I combined the better part of a bottle of red wine (California petit sirah from a certain Trader of value-priced wines) with three cups of chicken broth and brought them to a boil, reducing the mixture to about four cups.

After my pheasant thawed I rinsed the bird, removing any errant feathers and being sure to preserve some of the blood for use as a thickener later. I then cut the bird into quarters. If your bird was shot, as mine was, this is a good time to gently massage the flesh, attempting to locate the small balls of lead that brought about the pheasant’s demise. Don’t worry if you can’t find them, though: what your fingers cannot find your teeth surely will!

With pheasant appropriately divided and seasoned with salt and pepper, I proceeded to render the fat out of some chopped bacon (saving the crispy bacon bits for later of course). I then browned the pheasant pieces in the fat and set them aside. Next in the pot went a handful each of chopped onion and celery, and when that was soft a tablespoon or two of chopped garlic, along with a tablespoon of tomato paste. At this point, quite a bit of dark brown sucs had developed, so I deglazed the pan with some of the braising liquid, scraping up every bit of browned deliciousness. I then returned the pheasant pieces to the pot (along with juices) and poured in the rest of the braising liquid. It all spent the next long while gently simmering, slightly covered, until the meat was tender.

It wouldn’t be coq au vin — well, faisan au vin — without pearl onions and mushrooms. Since braising these along with the bird would turn them into an unrecognizable mush, most recipes call for cooking them separately and mixing them in before serving the dish. While you could brown the mushrooms and onions in a pan, I prefer to roast them; maybe it gives them a deeper flavor, but it’s definitely a lot easier. Just toss cut up mushrooms and onions with olive oil, salt and pepper and roast at 500ºF until they are as brown as you like them.

With pheasant starting to separate from its bones and mushrooms and onions a deep golden brown, I stirred everything together (remember those bacon bits?). If your sauce is looking a bit thin, now’s the time to stir in blood (or cornstarch if you’re squeamish). Over olive oil mashed potatoes, it was a rich and satisfying meal; not least because of the deep flavor of meat that had lived a life before it found its way to my plate. Since I’ve never eaten it I can’t say if it’s any better or worse than a wizened old cock, but I’ll take it over a six week chick any time.

Fall Paella

Although there are plenty of delicious steaks, pork chops and sausages routinely on offer at Clancey’s Meats & Fish, it’s the more exotic offerings that keep me going back. For example: the time I got my goat. More recently, I was greeted by the sight of fresh — not frozen — rabbits, curled up in their individual plastic bags asking me to take them home. Having recently been daydreaming through my various Spanish cookbooks, rabbit had me thinking one thing: paella. It doesn’t hurt that Clancey’s also sells a kick-ass fresh chorizo.

P is for Paella

I usually think of paella as a summer dish (perhaps because I’ve only been to Spain in the summer) but it is a great meal for the fall as well. You can’t get fresh peas or red peppers, but carrots and parsnips can lend a moderate, earthy sweetness to the dish, and brussels sprouts can provide the necessary green. Fall is also the time when a hunter can easily come home with a brace of fresh rabbits.

Things are getting spicy

While the vegetables used in paella can be flexible — indeed, they should be modified to match the season, what makes the paella a paella for me is the flavors of saffron and paprika (Valencians and anyone else are free to dispute this). These spices combine to give the dish deep, floral warmth, complemented nicely by generous squeezes of lemon juice. It can be a challenge to extract a lot of flavor out of saffron, which is all the more of a shame given how expensive it is. For this paella, I tested a technique I saw practiced by an old master of paella on the infuriating yet strangely captivating PBS series Spain: On the Road Again: rather than soaking crumbled strands of saffron before adding them to the broth, I ground them together with salt. This gave the rice a noticeable saffron flavor and brilliant yellow color.

Paella for Fall

  • 2 cups small brussels sprouts
  • Olive oil
  • 1 rabbit, cut into pieces and seasoned with salt and pepper
  • 1/2# fresh chorizo, cut into chunks
  • 2 carrots, diced
  • 2 parsnips, diced
  • 1 medium onion, diced
  • 2 cups short-grain rice
  • pinch of saffron
  • 1 tsp sea salt
  • 2 tsp sweet paprika
  • 5 cloves garlic, minced
  • 2 quarts chicken stock or water or a combination
  • 1 sprig of rosemary
  • 1 lemon, cut into wedges

Bring a pot of salted water to a boil. Add brussels sprouts. Boil 5 minutes and then transfer sprouts to ice water. Drain and set aside. (You could also cook the brussels sprouts in the broth with the rice and the rest of the ingredients but overcooked brussels sprouts are bad news so do so at your own risk).

Place sea salt and saffron in a spice grinder and grind until pulverized.

Bring the stock/water to a bare simmer in a pot.

Cover the bottom of a paella pan or other large pan in a layer of olive oil and heat over medium high heat. Add rabbit pieces and fry until golden on all sides. Remove from pan and set aside. Brown chorizo pieces and set aside.

Fall veggies for a change

Working over medium heat, add diced vegetables. Cook, stirring occasionally, until the vegetables are soft and starting to brown. Add the rice and stir to coat grains with oil. Clear an area in the center of the pan and add olive oil. Add the salt-saffron mixture, the paprika and the garlic. Cook until fragrant, about 30 seconds. Stir everything in the pan together. Add most of the simmering stock and the reserved meats and bring to boil. Simmer, stirring occasionally, until stock is absorbed. Try the rice; if it still feels underdone, add more stock and keep stirring.

As the last of the stock is absorbed, toasty aromas will start to emanate from the bottom of the pan. Don’t be alarmed! If you’ve kept your heat moderate enough, the rice isn’t burning; it’s reaching a crispy dark brown. This layer of cooked rice on the bottom — the socarrat — is the best part of the paella; it’s really worth turning off your burning rice radar in order to allow it to develop.

When you’ve got as much socarrat as you think you can stand, turn off the heat and stir in the reserved brussels sprouts. Jam the sprig of rosemary in the center of the rice and cover. Let stand ten minutes.

You can serve the paella by placing it in the middle of the table, handing everyone a spoon and telling everyone to dig in, but side plates and forks and knives can be helpful for managing those intransigent pieces of rabbit. How ever you serve it, make sure to squeeze plenty of fresh lemon juice over top.
