I think your comment about the salsas sums up why I was so excited about the market last Saturday and this dinner&#8212;so many possibilities!</description>

The carnitas look wonderful, and that salsa is a portrait of our market&#039;s bounty at this time of year.  If you get a chance to try a rack of young goat (&quot;chevron&quot; it&#039;s sometimes called, a bit of a marketing ploy) or chops, go for it, grilled medium rare.  A revelation.  Shepherd Song farm near Connorsville, WI, has excellent goat and lamb.  I see that Clancey&#039;s&#039; is Hill and Vale (nothing wrong with that!).

Stop by the Real Bread booth and say hello next time you&#039;re at the market.
